Truffle Udon Soup

Ingredients
-3-5 Chicken Breasts or preferred protein
-Udon Noodles
-1 large package Mushrooms
-1 bunch Baby Bok Choy
-2 Shallots
-2 stalks Scallions
-3 cloves Garlic
-1 inch Ginger
-Cilantro to taste
-1/4 cup Fish Sauce
-3 tbsp Soy Sauce
-2 tbsp Rice Vinegar
-Truffle Oil
-3 tbsp Chinese Five Spice Seasoning
-1 tsp Black Garlic
-~90 oz Water/Chicken Broth/Vegetable Broth
-Salt & Pepper to taste
Recipe
1) Slice mushrooms, garlic, ginger & shallots to desired soup texture & add to large pot with olive oil. Simmer until caramelized & liquids have drained from mushrooms.
2) Add chicken/protein to the pot and season generously with Chinese Five Spice seasoning, salt & pepper.
3) Add fish sauce, soy sauce, rice vinegar & black garlic. Once fragrant, fill pot with water/broth.
4) Simmer soup for at least 30min, seasoning with more salt/pepper/Chinese five spice to taste.
5) Once the flavors are melded together, add truffle oil, bok choy, cilantro & scallions to the soup.
6) Add udon noodles & simmer until just cooked. Serve & enjoy with more truffle oil if desired.
